Eggless Rava Cake

Ingredients:
Fine semolina or chiroti rava 1 1/2 cups
Sugar powdered 1 cup
Salt 1/4 tsp
Cardamom powder 1/4 tsp
Baking powder 1/2 tsp
Baking soda 1/8 tsp
Tutti fruiti 1/3 cup(I didn't use)
Mixed nuts(cashew, almond) 1/4 cup
Raisins 1/4 cup
Oil/Ghee 1/2 cup
Milk 1/2 cup
Beaten curd 3/4 cup

Method :  Mix the rava,salt,sugar,cardamon powder with oil/ghee and curd and half the milk and keep.aside for 30-40 mins..  After 30-40 mins add the baking powder and soda and mix well..check the consistency...the batter should be like idli batter consistency...if thick add the reserved milk and mix...add 1/2 of the nuts and tutti fruiti..mix well.. Pour in a greased pan ... sprinkle the remaining nuts and tutti fruits and bake in a preheated oven at 180 degrees for 30-35 mins..

Note  :  This can be steamed in a pressure cooker or idli cooker too..  If you do.not have fine semolina ..just powder the normal Bombay rava in the mixie and use..

Ingredients
Atta 1.5 cup
3 large ripe robusta bananas
Baking powder 1 tsp
Baking soda 1/2 tsp
1/2 cup cane sugar
2/3 cup vegetable oil
1/2 tsp vanilla extract
Some chopped walnuts

Method  :  Preheat oven to 180 degree Celsius.  Blend bananas well.  Add sugar,oil and vanilla extract and mix well.  Add atta, baking powder and baking soda to the wet mixture after sieving.  Mix all the ingredients well without lumps.  Bake for 50 minutes in a greased pan.  Inserted toothpick should come out clean for the cake to be baked well.

Badam Cake

Soak badam in boiling water for an hr. Remove the skin.  Grind it to smooth paste adding 2 cups milk. Measure it in a cup. Add equal measure of sugar . Can add 1/2 cup more if you like sweet v much. I added equal measure and it was good.   Heat a pan add 8tbsp unmelted ghee then the paste and sugar mix well so no lumps are formed. Add few crushed saffron strands to it and mix well. Keep stirring it until it leaves the sides of pan and pour on a greased plate. Smoothen it with a flat spatula. Cool and cut it. Can decorate it of your choice. Tastes yummy.

Melt equal quantity of dark chocolate and butter (say 100gms each) in a pan to liquid consistency. Add 200gms of maida, 2 tsps of baking powder, 1tbsp of vanilla essence, 100gms chopped walnuts and 50ml milk. Add more milk if the batter is too thick.. Grease a cake tin and bake for 20-30mins in 180degrees

Eggless Cake

Ingredients
2 cups - wheat flour
1 cup - milk powder
1 1/2 cups - Sugar powder
1/2 cup - cooking oil (no groundnut oil)
2 cups - Milk
1 tsp - vanilla essence
1tsp - Eno fruit salt

Method:
Mix all the ingredients thoroughly, in the end add eno fruit salt. Grease the baking tray with ghee, transfer the contents to baking tray and bake it at 180 degree c for 38 minutes. Cool before taking out.  
If you want to use baking powder and soda, then use 3/4th tea spoon baking powder and half tsp baking soda. I didn't use because I don't want to give those to my younger one. Also you can add a spoon of vinegar in milk and then add baking soda to that milk. when it bubbles, mix that with dry ingredients.
