Cream of Spinach Soup

Recipe for Cream of Spinach Soup

Very simple.  Take 1 cup of spinach cut into fine pieces and bring to boil along with 10 pods of garlic.  Allow to cool strain water and make it to a fine paste in mixer. Keep the strained water separately.  In a wok, add 2 tsp of Ghee / Butter and add the grinded paste.  Add the strained water and mix well.  Add water if required.  Add salt and Pepper powder.  Mix 1 tsp of Corn flour in water and pour in the boiling soup.  Adjust the thickness of our choice.  Remove and serve hot in Soup Cup topped up Fresh cream along with with Fried Raisins / Fried Breads of your choice. Aaharam's Special Cream of Fresh Spinach Soup is ready.

Veg Clear Soup

Veg clear Soup with Fried corn flakes.

Recipe for Veg Clear Soup. : Fine chop onion, Beans, Carrot, Cabbage and saute in 2 tsp of butter. (Dont saute in oil or ghee. The taste of the soup lies sauting in Butter only). Add boiling water into it, add salt and boil, until veggies are cooked. Add salt to your taste while veggies are cooking. Now take 1 tsp of Corn Flour, mix in water and add to the Boiling Soup until its like thick (Check soup consistency). Transfer to serving bowl, top up with crushed pepper, chopped cilantro and fried Corn Flakes and serve hot.... Your yummy veg clear soup is ready.

Manchow Soup

Ingredients:cabbage, carrots, onions , capsicum (finely chopped) –all each 2 tbsp,Corn Flour - 3 tsp, Salt, Sugar – only 1 tsp 
Vinegar - 1 tsp, White Pepper - 1/2 tsp, Soya Sauce - 1 tsp
Aginomotto - 1/2 tsp, Spring Onions , Coriander stems 2 tsp finely chopped Garlic 10 pods - ginger 1 inch - green chillies 3 ( all finely chopped ), Tamarind Pulp - 2 tsp, Black Salt – 1/2 tsp

Method : Heat oil in a pan add the garlic, chilli, ginger and sauté then add all the vegetables and fry for 1-2 minutes.Now add ajinomoto and fry for more 2 mins and then add 3 cups of water.To this add salt, sugar only 1 tsp, soya sauce, pepper pd, tamarind juice and bring to boil, Once the mixture is boiling add corn starch gradually and stir constantly until it thickens. Now add vinegar, spring onions leaves and coriander stems and bring to boil for 2 mins Serve hot with fried noodlles

Puree De Spinach

Recipe : Add butter to a kadai. when heated, add finely chopped shallots, spinach and saute for 3 mins.. Add water and bring to heat. (In other words its called as blanching)... Once cooked, remove, cool down and grind to paste in mixer. Pour the mixture to the kadai and check for water consistency and bring to heat again.. Add salt and once aroma raises, switch off and serve hot topped with crushed pepper. Fried Pappads / Babycorn Pepper Fry would be best accompaniment.

Note : Especially this puree de spinach is good for lactating mothers, pregnant women. Also this is a starch free recipe, where this can be given to kids, for their activeness due to rich in fiber / vitamins.

Cook thuvar dal separately ... Now in a pan add ghee take Sombu 1/4 tsp krambu 2nos elaichi skin 2 pattai lil fry, add small onion, grated Inji, pondu, tomato , coriander thandu/ leaves then add 2 cups curry leaves now cook well.  Let it cool puree it in the mixer take out the patai krambu and ilaichi b4 grinding since the flavor might be too strong.  Now take a cooker add lil ghee , 2 green chillies seed removed, then add the puree and mashed dal.  Add more water close with weight for 5 mins in medium flame.  Now switch off the heat.  Open when the pressure is released.  Now strain the soup add salt pepper according to spice u like and a dash of lemon juice . For garnishing add some fresh cut Coriander leaves

Mushroom-Broccoli Soup

Fresh Cream Mushroom-Broccoli-Carrot Soup sautéed in Garlic

INGREDIENTS
Broccoli: 250gms
Mushroom: 250gms
Carrot: 1 medium
Water to immerse Broccoli, Mushroom and Carrot
Garlic: 6
Butter: 1/2tsp
Fresh Amul Cream: 1 box
Pepper to taste
Oregano 
Mixed Herbs
Salt to taste

METHOD :  Wash Mushrooms and scrub those black layer from it, remove the stem, dry it and halve it.  In the same way wash the Broccoli and separate into small florets.  Wash and peel Carrot, cut it into round slices.  Now take a kadai, heat butter, saute minced(podiya narikina) garlic until it gives nice aroma.  Add Broccoli, Mushrooms and Carrot, just give quick stir.  Pour in the water and boil the vegetables until it's soft.  Now add pepper, salt, oregano, mixed herbs and fresh cream, stir it until it forms medium thick gravy.  Switch off immediately and serve it hot.  PS: You can sprinkle extra pepper and salt if needed

Saute the veggies (Peas, Carrot, Beans and Cabbage) in 2tsp of Butter.... Boilthe veggies (1 cup) and remove the water... Grind the veggies in mixie and mix with the filtered water.. bring to boil again mixing both.. add 1 tsp of corn-flour, salt and pepper and make a thick consistency (adjust water leverl to your level).... Garnish with chopped coriander leaves and serve hot with pappads.......

All Clear Veg Soup

Method is very simple, I directly cooked all the veg i.e finely chopped 1/2 carrot, 100 gms cabbage, and 1/2 small size capsicum with 3 cupso water , added required salt , white pepper and black pepper 1/2 tspn respectively ater it cooked added 1 tspn butter and diluted corn flour water,allowed it to boil for 5 minutes and switched off the stove. ஒரு மணி நேரம் முன்னாடி 10 பாதம் பருப்பு, 10 முந்திரி பருப்பு, 10 ஸீட் லெஸ் பேரீட்சம் பழம் தண்ணீர் ஊற்றி ஊற வைத்து கொஞ்சம் கொப்பரை தேங்காய் அல்லது தேங்காய் துறுவல் சேர்த்து நன்றாக மைய அரைத்து கொள்ளவும,

குக்கரில் அரை லிட்டர் பால் ஊற்றி அதில் ஒரு கப் பயித்தம் பருப்பை களைந்து போட்டு கொஞ்சம் தண்ணீரும் ஊற்றி நாலு விசில் விட்டு இறக்கவும.

Tomato Soup

Vegetables tomato soup

Grind five or six tomato nicely add five/six tumblers of water and add finely chopped thin size carrot, potato, capcigam, onion, beans, Cauliflower, little chopped ginger, poondu (optinal) one piece green chilly, salt and boil it for twenty minitues and add two more tumbler of water and add one teaspoon of cornflower with little water in that agter five minitues u will get fine vegetable tomato soup. Eserve with paper powder and roasted bread in soup bowl.

Sweet Corn Veg Soup

Nowadays it has become a fashion to have a Soup to start with before lunch or dinner and named as Appetizer... And many used to order at Hotels with varities of Soups..... Today, let me bring you a normal and good recipe of Sweet Corn Vegetable Soup, which is home made and served before any Dinner / Lunch.... It is very simple and made in minutes and can be served with Pappads / Fried Appalams / Potato Chips.
Ingredients
1 cup corn
3 cups water
1 tbsp Corn flour
Salt to taste
Bit of Sugar (optional)
Boiled peas and small pieces of carrot, coriander leaves (optional)
1/2 tsp Soya sauce
1/2 tsp chilli sauce
Method : Cook the corn and keep some separately . Grind the remaining corn with little peas. In a pan, add water, grinded corn and corn flour and mix well on low flame and stir without making bumps. Add the remaining ingredients and when the soup becomes thick. Now add the boiled peas, small pieces of carrot and the corn kept separately. Garnish with very few finely chopped coriander leaves and serve Hot with crispy Potato Chips.

Manathakkali Keerai Soup

Each keerai ura kata, manthkali, mendhiya, murunga, kothamalli, and kocha karavapali. 

Wash all these keerai well and chop into big pieces. 
Put in a pressure cooker add a handful jeera then add water till the keerai is submerged and close the cooker and boil it for around ten whistle. 
Let it cool then filter it and drink it with little salt and a dash of lime. 
You can store this in the fridge for three to four days. 
Add salt and lime only while drinking.
For a change you can use agathi keerai. 

Ponagani keerai or any other keerai but manthakali, kothamali karvapalliai and jeera must
