Coconut Powder - தேங்காய் பொடி

Recipe for Coconut Powder - தேங்காய் பொடி

One cup grated coconut
One small cup urad dhal
One small cup channa dhal
10 red chillies 5 balagai chillies
Asafoetida ...a pinch
Salt to taste

Dry fry each item separately...cool well...first powder dhals and then add coconut... Powder it

Here comes the variation
1. U can use dry coconut also.(kopparai)..I used store bought dry coconut powder
2. If u use normal coconut..dry fry till water evaporates in very low flame...
3. U can dry fry little tamarind also and grind with other ingredients
4. U can dry fry curry leaves also and add with other ingredients
5. U can dry fry till/ ellu also 
6. U can add coriander leaves... Dry fry n add with other ingredients
Each one will give different flavour

How to Use Aaharam’s Ready Mix Vathakuzhambu :  Soak lemon sized tamarind in 500ml warm water and extract Juice.  Unpack 50 gms of Ready Mix Vathakuzhambu and mix in the Tamarind Juice.  Add required salt and mix well.  Bring to boil in medium flame and once thickened, add 4 tsp of Gingelly oil and remove from flame.  Your authentic / traditional / homemade Vathakuzhambu is ready to serve.  No tempering required.  All ingredients mixed in the pack.

Ingredients : Red Chilly, Tuvar Dal, Chenna Dal, Urud Dal, Asafoetida, Pepper, Jeera, Cumin Seeds, Coriander seeds, Fenugreek Seeds, Rock Salt, Dried sun berry @ Manathakkali Vathal, Mustard Seeds, Curry Leaves.

Curry leaves - 100 gms, Dried Ginger @ Sukku - 10 gms, Pepper - 10 gms, Thippili @ Kandanthippili - 10 gms, Black Seasame - 50 gms, Urud dhal (Black) - 50 gms, Aaharam Asafoetida - 20 gms.

Sun dry all the ingredients above and powder it and mix well. Have it daily in cooked rice with Ghee / Gingelly oil, according to taste. This Miracle Podi can be had with Idli / Dosa too. This powder controls Asthma, stops cough and cold, digestion troubles, constipation and keeps body in good health.

Angaya Podi

Vazhakkai Podi

Recipe......Row Banana 1
Red chilly. 3
Ulurtam paruppu 2 teaspoon
Perungayam 2 pinch
Grated coconut 2 teaspoon
Salt as per tast
Any oil 1/2. Teaspoon
Method....peel the banana nd boi it with salt nd pinch of manjal podi. Shoud not be over boil. (. Just 75 % boil ). Let the banana cool in running water nd keep aside. Roast. Uluttam patuppu. Red chilly. And hing. With 1/2 teaspoon oil. As goldan . Color and grind it with.grated coconut and salt ( not very fine mixture. Little. Curse ) Now add the boiled banana in the mixture and grind it. For few second only (. No need of over grind )

Curryleaves Powder

Ingredients
Urud Dal - 2 tsp
Bengal Gram - 2 tsp
Red chilli - 3 nos
Asafoetida - 1/2 tsp
Salt - to taste
Curry leaves - 2 cups
Oil - 1 tsp
Method :- Take curry leaves removed in separate leaves and allow it to dry in room temperature for about 4 - 5 hours. In a large pan, take little oil (1-tsp) add Urud dal, Bengal gram and fry till golden brown. Add Red chilli, asafoetida and curry leaves and saute for 2 minutes in low flame, until curry leaves gets the heat. Add salt and after allowing it to cool, transfer to Mixer Blender and grind it to coarse powder. Pack it in Air tight container and shall be used for more than 15 days of use...
This Curry leaves powder should be taken with plain rice and Ghee along with fried Vadaams (papads, etc)

Sambar Powder

Home made Patti sambar powder recipe. Can be used for curry, kootu, vatha kozhambu and rasam.
INGREDIENTS
1/2 Kg Gondu miligai
1/2 kg dhania
400 gms thovaram parpu
200 gms kadalai parpu
100 gms miligu
100 gms varali manjal
50 gms mendhiam
All the above ingredients to be bought and dried in the sun for about 2 hours and then grind it in a flour mill. Let it cool for some time and store in air tight containers.


Udupi Rasam Powder

How to Make Tasty UDIPI Rasam Powder?... 
Here is the recipe...
Coriander seeds - 1 cup
Red chillies - 1 cup
Split black gram dal - 2 tbsps
Cumin seeds - 2 tbsps 
Fenugreek seeds - 2 tsps
Mustard seeds - 2 tsps
Sesame oil - 1/4 tsp

Method : - Dry roast mustard seeds and fenugreek seeds on low flame. When the mustard seeds start spluttering and the fenugreek seeds turn reddish in colour remove them on to a dry plate. Roast cumin seeds similarly till you get a pleasant aroma and remove it into the same plate. Heat oil in the same pan and add coriander seeds, black gram dal and red chillies. Roast them together till the ingredients emanate a pleasant aroma and the chillies become crisp. Remove the roasted ingredients on to a plate and allow to cool. When all the ingredients are cooled grind them together into a slightly coarse powder.

Garam Masala Powder

Coriander seeds - 1 cup
Jeera- 1/2 cup
Pepper corns - 1 tablespoon
Green cardomom - 10
Bay leaves - 8 to 10 
Nutmeg (jadhipathri) - 1 
Saunf ( sombu) - 1 tablespoon
Star anise - 2 
Cloves - 10
Cinommon stick ( pattai ) - 4to 5 


This is very fresh when ground . I grinded very fine . Can also grind coarsely for more enhancing flavour. Will stay fresh for a month . Tastes very different from the ones we buy in shops and the recipes tastes very good and ofcourse not to mention the goodness of homemade stuff.
